Natacha Fink, a native of Manaus, has created an imaginative menu that relies on fish, fruits and vegetables of the Amazon, with great emphasis on sustainability. They recommend the juma (tambaqui fish marinated in lime and mint and served with caramelized grilled pineapple) and piranha Mujica (a vigorous fish soup). It is one of the best restaurants in town, and one of the most environmentalist.
